Vegetarian Daily Meal Plan Idea #1


Breakfast:  P&B toast



Heat the bread for a few minutes to get it toasty and warm, this would make spreading the peanut butter easier. It's my first time to try unsalted all natural peanut butter, because this is something not so easy to find here in Japan. Place a few slices of bananas on top. Pair this with your favorite smoothie or in my case, a cold chocolate ginger drink. 

Lunch: Tofu, Stir fried vegetables and Quinoa


Cook 1 part quinoa with 2 parts water for 15 minutes. In a separate pan, stir fry your favourite vegetables, I'm usin  broccoli and carrots seasoned with salt, pepper and sesame oil. Tofu is a staple food here in Japan so you can find a wide variety to choose from. This one is ready to eat which is a great time saver. 

Dinner: Penne pasta in tomato sauce topped with cottage cheese and olives


Boil pasta for 8-10 minutes or until al dente. Rinse and set aside. In a pan, add a teaspoon of olive oil and minced garlic. Add your favourite tomato sauce, I'm using a store-bought tomato basil sauce. Let it simmer for a few minutes, turn of the heat and add the pasta. Mix well, and top it with cottage cheese and sliced olives. 


Shopping List:

Bread

Peanut butter
Quinoa
Fresh or Frozen mixed vegetables
Tofu
Pasta (penne or any of your choice)
Tomato sauce
olives
cottage cheese

Always have on hand:
olive oil
salt
pepper
minced garlic (Coz I hate peeling & cutting it lol)
sesame oil or any kind of seasoning

21-Day Habit Challenge


Did you know that it takes at least twenty one days to imprint a new habit? Well, that was what I read and I believe it.

Are you like me who has been setting goals for yourself but keep failing over and over again? I would be really motivated at first, buying everything that I need, then as the days go by I would keep falling behind my goal.

I want to invite you to this 21 day habit challenge. Is there a habit that you've been dying to incorporate into your life? For example, waking up early, drinking lemon water in the morning or exercising.
To do this challenge, the key is to make it as easy and as doable as possible. It should not take more than 15 minutes and must be done at the same time each day for 21 days.

My first challenge for myself is to have a morning ritual upon waking up. It consists of a 5-minute run on the treadmill, followed by 5-minute Sun Salutation yoga and finished by another 5-minute meditation. I know 5 minutes is short but that's the beauty of it because you won't have any excuse not to do it.

It's good to track your progress by logging it on a chart like the one below. Just put a mark on each box upon completion each day. But if you miss a day, start over.
