Vegetarian Daily Meal Plan Idea #1


Breakfast:  P&B toast



Heat the bread for a few minutes to get it toasty and warm, this would make spreading the peanut butter easier. It's my first time to try unsalted all natural peanut butter, because this is something not so easy to find here in Japan. Place a few slices of bananas on top. Pair this with your favorite smoothie or in my case, a cold chocolate ginger drink. 

Lunch: Tofu, Stir fried vegetables and Quinoa


Cook 1 part quinoa with 2 parts water for 15 minutes. In a separate pan, stir fry your favourite vegetables, I'm usin  broccoli and carrots seasoned with salt, pepper and sesame oil. Tofu is a staple food here in Japan so you can find a wide variety to choose from. This one is ready to eat which is a great time saver. 

Dinner: Penne pasta in tomato sauce topped with cottage cheese and olives


Boil pasta for 8-10 minutes or until al dente. Rinse and set aside. In a pan, add a teaspoon of olive oil and minced garlic. Add your favourite tomato sauce, I'm using a store-bought tomato basil sauce. Let it simmer for a few minutes, turn of the heat and add the pasta. Mix well, and top it with cottage cheese and sliced olives. 


Shopping List:

Bread
Banana
Peanut butter
Quinoa
Fresh or Frozen mixed vegetables
Tofu
Pasta (penne or any of your choice)
Tomato sauce
olives
cottage cheese

Always have on hand:
olive oil
salt
pepper
minced garlic (Coz I hate peeling & cutting it lol)
sesame oil or any kind of seasoning
